The Øland wheat ripens whilst waving in the breeze, and when the harvest is in, Freya’s Community Bakery opens
Freya’s community bakery puts the healthiness of food first – the entire way from farm to table.
Our quality starts with the farmer, who cultivates the land with bio-dynamic methods and in respect for nature’s conditions avoiding all use of pesticides and artificial fertilizers. This provides the necessary environment required for healthy plant grownth which can provide life-giving food for everyone.
The miller grinds the grain on a slow-moving stone mill-stone so that the grain does not heat up during the grinding process ensuring that all the good components of the grain are kept alive, so that the essential micro nutritments and minerals will be preserved in the flour.
The master baker kneads the freshly ground flour by hand, forms it into bread, lets the bread slowly to be finally baked at approx. 120 degrees celsius.
The distributor and grocer brings the fresh, delicious bread to the customers and, of course, ensures the right conditions for the bread, on its journey.
You, as our new customer, are an extremely important part of the community, because healthy foods can only arise through an expressed need on your part that demands healthy, nutritious foods and can align with the producer’s ability to produce these foods.

Sweet Things:
Various varying pies and cakes.
For those who bake at home: fresh stone ground flour:
Wholemeal flour from wheat, Øland wheat and rye.
(This is our expected product range, from October we will continuously send out the week’s current range!)
Freya’s community bakery works as a not for profit charitable partnership with the ICT, where you as a customer are also members of the association in order to be able to buy our wonderful bread.
With the Freya community bakery, we are creatubg a truly sustainable agricultural economy freed from burdensome bank loans through a direct collaboration between agriculture, production and consumers under ICT Denmark’s three-fold social impulse.
